Though she initially pursued engineering, her unyielding passion for food led her to study Gastronomy and Cooking in Medellín, followed by professional honing at Alain Ducasse Formation in Paris.

Chef Vélez’s encounter with Indian cuisine marked a transformative moment in her career. It allowed her to reconnect with the joy of cooking, exploring flavors, ingredients, and techniques that were both foreign and comforting. Her mission to bring the heart of Indian culinary art to a Latin context is a testament to her adventurous spirit.
